This is one way how Salted Fish (Hum Ee, Kiam Herh - Chinese Dialect) is being dried or processed. Salted Fish is being used in some Chinese cooking to provide that special flavour. Yummy, yummy! The maggots help accelerate the drying process, by nibbling up the moist areas of the carcass. This was taken on a Kelong Fishing trip and stay. http://www.clickclick.sg
