Title: Cooking a Rabbit with aïoli sauce (garlic mayonnaise) "Conejo al aioli".This is a mediterranean traditional spanish recipe, rather catalan than spanish recipe. It is a common recipe in Catalunya, where the "cunit" is well appreciated. I have first tasted this meal in a restaurant in Perpignan, South East of France, border with Spain, roasted on wooden fire and served with burning rosemary that was releasing a marvellous aroma in the air. Traditionnaly catalan idioma was spoken all along the "Côte Vermeille" (Banyuls, Port-Vendres up to Argelés...) and people used to consider themselves as french catalans, sharing common roots, including catalan language, and common culinary traditions.Ingredients:- Rabbit cut in pieces: for 2 people, 1/2 of 1Kg rabbit is enough.- 2 eggs- Garlic- Fine extra virgin olive oil.- Fine herbs: thyme, rosemary, laurel, salt, black pepper.The pieces of rabbit are seasoned with olive oil, garlic pieces and fine herbs. Roast the pieces of rabbit under the electrical grill, once the rabbit is very well roasted, remove and keep it hot in order to serve with the aïoli sauce.A (false) aïoli sauce is then prepared, it is in fact a garlic mayonnaise.You can serve the grilled rabbit with vegetables, preferably with either rice or potatoes, and add the aïoli sauce to the rabbit.Courtesy of: www.IbericDelice.comTo be continued...
